Pantry Cook means I have one, right?

I would post what I "keep" in my pantry, but who are we kidding?  The staples are rarely a static thing.  I like to pour over recipes.  I'll go to the grocery and farmers markets and find what's in season, and make up what I need.  I know.  I know.  It's not cost effective to go with out a list.  I do go with a list, but it's a flexible one, depending on what I find.  Then, inevitably, when I get it home, it will sit in the fridge and on the cupboard shelf, rarely becoming the intended dish.

Here are, however, some things I try to not be without.  I shop for either know the farmer, know the animal, and when not possible, my next choice is "organic"*, then "free-range"*.  I long for the days of my childhood when milk was delivered each morning in a glass jar.  I miss having the green grocers either up the road on Taylorsville Road, or down on Bardstown Road (for those familiar with Louisville).  I don't need a large fridge, because quite honestly, now that I have one, I sadly will let food go to waste for lack of seeing, and thus remembering what I have.  I know, that is yet another thing I need to work on.

*these terms have been diluted by it's official definitions of the FDA and are and can be just as industrial and bad-for-you as industrial farming, but at a minimum offer greater protections than their subsidized versions.

Refrigerator

  • Fresh eggs - there is nothing like a fresh egg for baking and cooking.  The yellow yolk is brighter and has a great consistency.  
  • Cream - heavy cream.  You can always mix with milk to get your half-n-half
  • Milk - see cream.
  • Cheese - the more artisanal, locally sourced cheeses the better.

  • tofu/seitan
  • lettuce/greens of some sort
  • vegetables - in season
  • fruit - in season, and I cave and enlarge my carbon foot print for those fruits grown in S.Am., etc.
Freezer - don't sneer, it's unbecoming.  This is my table, and yes, sometimes I don't get to that food item in time, or if I do, it gets frozen for a quick meal later.

  • pizza (there are times it just sounds good, especially when I don't feel like cooking, and my husband JJ is good at heating these up).

Root cellar: not really a cellar, more like a wicker basket

  • canned veggies - artichokes, french style green beans b/c a quick greenbean caserole is one of my comfort foods

  • no HFCS sandwich bread
